Day 4

Again, I only have a picture of my breakfast and dinner… I feel weird taking pictures of my lunch at work haha. BUT a coworker did tell me that I always have the best lunches and he’s jealous. This in response to my delicious salad topped with salmon and homemade balsamic vinegarette and blueberries and a medley of veggies. YUM!

For breakfast I decided to try something completely new and baked an egg inside half an avocado. I overcooked it, unfortunately. I think it would have been much better if the yolk had been runny. But the flavor was still good! I had this with leftover cauliflower.

For dinner,  I had more chili and a side of broiled eggplant. So good! I’ve never made eggplant before but this came out delicious. I sweat the slices for half an hour and squeezed out some extra water. Then drizzled with olive oil, salt and pepper, broiled for 6 minutes on each side. The skin was a little tough, but GREAT flavor. Here we go!

I love toppings on chili and I’m finding lettuce and raw peppers add a great crunch. Tonight I put some avocado (leftover from this morning) and lettuce.

I woke up at about 7 this morning with a headache but went back to sleep for an hour or so and woke up feeling great. No hangover!

Also, I think my favorite snack now is a handful of almonds and some fresh berries. Im finding new (to me) ways to cook delicious food. Im really enjoying this experience!

I haven’t really been craving things I can’t have. I guess I’m lucky, but I’m sure it’ll come. Probably on Superbowl Sunday!

Day 3

I didn’t want egg cups today. I just wasn’t feeling it. It wasn’t going to happen. So I decided that I would have some silky gingered zucchini soup (recipe) with a banana on my way to work. I have started to drink my coffee darker and darker and am working toward drinking it just black… I’ll get there.

For lunch I had some more of my chili that I made earlier this week. I realize I forgot to post the recipe for it, so find it here.

Just a note about that chili… it’s DELICIOUS. When I added the cocoa to the meat and onions, it started to smell so amazing and rich…. I left it on the stove during my graduate classes, and I was hard-pressed not to steal a bowl in the middle of my long-winded professor’s lecture.

And my favorite meal of the day was dinner.. I baked salmon that I rubbed with chili powder, salt and pepper, and had roasted cauliflower to go with it. I LOVE my veggies like this. I know I talked about roasted broccoli before, and cauliflower is just as good. No lie, I almost ate the whole head (but knowing that it’s a cruciferous vegetable, I decided to spare my fiance that ordeal.)

I am surprised (happily!) that I have yet to experience the negative side effects of whole 30, such as the hangover. I know it’s only day 3 and I have far to go, but I’m still feeling empowered and strong. Surprisingly enough, I’m not getting cravings or feeling hungry at all. Today, I had a few carrots after school, and I’m currently having a small handful of almonds with blackberries.

So far, so good!

Day 2 – whole 30

Expecting to wake up with a “hangover” today, imagine my surprise when I feel peppy and energetic. I’m not complaining, just hoping it stays like this! Today’s meals were delicious and similar to what I had yesterday.

Breakfast was a delightful combo. Egg cups, chicken sausage and half an avocado, while lunch was leftover chili topped with pepper and avocado and grapes on the side. Delicious!

I forgot to take a picture of dinner, but it was a basic salad with chicken on top. As an extra added delight, I tossed some blueberries on there. The pop of sweet was delightful and unexpected.. YUM! I highly recommend you try it.

Update

It’s been awhile. That’s my fault. I allowed life to get me busy and gluten to take over most of my meals. I’m going to try and keep up with this a bit more, although a lot has changed so here’s an update!

I’m engaged! T proposed back in August and we are getting married in October 2014. It’s coming along quickly and I’m so excited for it.

I’m also a full time graduate student. This is online and time consuming, but I should be done December 2014. Woo!

Also, we got a cat ad are moving into a house in a month. So we are super super busy. But that’s okay!

I’ve been having various nasty stomach issues over the past several years. I’ve decided to try and find out why and figure out what I can do about it. I’m starting a very strict Paleo-inspired diet called Whole 30. Today is my first day, and I’d like to use this site to share my experiences and thoughts and recipes that I make/find.

So far, it’s been good. I know that it’s only day one and therefore probably the easiest day, but it’s going well! for breakfast I had egg cups (eggs, kale, onions and peppers) and an orange. For lunch, I had a salad with baked chicken and balsamic vinegar and olive oil (loaded with veggies and so very good!)

currently, zucchini soup is on the stove for lunch tomorrow,and up for dinner tonight is a chili.

I haven’t taken any photos yet but I definitely will and keep this updated as much as possible. I have found a new favorite snack: blueberries and almonds. They go sooo well together!
